Hi guys! I haven't posted in a while - partly, I guess, because I haven't been wanting to cook much! Or create any new recipes, for that matter. But if you follow me over on Instagram you've seen that I'm still whipping up some super simple, delicious, quick meals...
I put together this Bento-Box salad with everything pretty, YES, just because it looked good. But trust your eyes, because it was an incredible flavor combo! I love the crunch of the kelp noodles and the bright green flavor of the fresh cilantro and basil.
So, I've been pretty much repeating that same bento-box combo with the addition of eggs, tuna, or whatever protein I want to add! And always, always, avocado.
You know when you're standing in front of the fridge pondering life and wondering wtf you're going to eat for dinner? Hint: you can throw every veggie you have into a pan, toss in some avocado or olive oil, salt & pepper, maybe some garlic & chili peppers, oven roast for 40 minutes, and it will likely turn out DELICIOUS.
Hey, you might even love that roasted veggie mix so much that you throw it into sprouted corn taco shells and top 'em with lots of guac for the next day's lunch!
I've been "zoodling" ALL the things with my spiralizer... zucchini, beets, radishes, carrots... it's just more fun to eat veggies in ringlets!!
