Blue Cheese Caramelized Onion Dip

JUST SAY NO to those dry-mix packets for dip seasoning with ingredients like hydrolyzed soy protein and partially hydrogenated soybean oil (those are BIG no-nos, fyi). Since you know by now that FAT is your FRIEND, make this delightfully fat-full, creamy, tangy dip for veggies at your next gathering!

Blue Cheese Caramelized Onion Dip

Ingredients:

1 cup organic full-fat sour cream

4-6 oz blue cheese, or more for intense flavor

1 medium yellow onion

2 Tablespoons butter

1 teaspoon garlic powder

2 teaspoons lemon pepper

1 teaspoon smoked paprika

Salt to taste

1 green onion finely sliced

 

Instructions:

- Finely chop the yellow onion. In a skillet over low heat, melt the butter, and add the onion. To caramelize the onion, keep stirring occasionally, and keep the heat low - the process should take about 15 minutes until the onion is browned.

- In a bowl, smooth the blue cheese into the sour cream using the back of a spoon against the bowl. Add seasonings and green onion.

- When the onions are done, add them right into the sour cream mix, and blend together. 

Due to the richness of this dip, it's best served with crisp veggies like celery and carrots. Try it as a dipping sauce for spicy chicken or wings!
