Mint Chocolate Chia Ice-cream

I have a slight obsession with all things combining mint and chocolate.  I'll blame it on my childhood nightly bowls of Breyer's Mint Chip ice cream; smooth and white and minty, flecked with chunks of rich chocolate...  Anywhoo... old habits die hard, and the first few times I went through my own Sugar Detox there were plenty of evenings I needed a dessert substitute to wean me away from the end-of-the-night sweet ritual.  And so I compiled a list of no-sugar desserts for inclusion in my Sugar Detox program.  Here is one of my favorites, an ode to minty wintery white Breyer's.  

**WARNING!** If you are not currently detoxing from sugar with us, this "ice-cream" may taste, well... terrible to you.  Going through Sugar Detox will adjust your palate from needing a flood of overly sweet flavors to being able to appreciate natural, real tastes!  If you are a Sugar Detox Alumni looking for a little treat, try adding 1 Tablespoon of pure grade B maple syrup - Yup.


Mint Chocolate Chia Ice Cream  (4 servings)

1 can full-fat coconut milk

3 Tablespoons Chia Seeds

3 Tablespoons Cacao powder

1 teaspoon Pure Peppermint Extract

1/2 teaspoon pure vanilla extract

1/3 cup water

Place all ingredients into a blender and blend until smooth.  You may have to pause to scrape the sides and break up any clumps of cacao powder.  Pour the mix into a container for storage, and chill at least 30 minutes in the fridge OR freezer, depending on desired consistency.  Garnish with a sprinkle of cacao powder and enjoy!
