Spring Fennel Salad


fennel salad

1 large bulb fennel, thinly shaved

6 radishes, halved and sliced

1 bunch flat parsley, chopped

4 green onions, thinly sliced

1 cup shaved parmesean

For the dressing:

2 tablespoons fresh lemon juice

1 teaspoon apple cider vinegar

4 tablespoons olive oil

1 teaspoon fresh thyme, chopped

salt and pepper to taste

- Mix all the salad ingredients together in a large bowl

- In a small mason jar, shake up the ingredients for the dressing until emulsified (all blended up together nice-like)

- Dress to taste and enjoy!
