This soup is SO easy and so damn delicious, you will NOT miss the tortillas, I promise. It's a popular favorite from my Sugar Detox recipes. You could simmer it for a while on the stove as an alternative, but it's a beautiful crock-pot meal that's one of those throw-it-all-in-and-forget-it meals. The aroma of rich spices will fill your house as it cooks!
Chicken Tortilla-less Soup
2 chicken breasts
2 chicken thighs
1 large can fire-roasted tomatoes
1 large zucchini, chopped
4 large carrots, chopped
2 anaheim or poblano peppers, seeded and chopped
2 jalapeno peppers, seeded and sliced
1 medium onion, chopped
4-6 cloves of garlic, minced
2 teaspoons cumin
2 teaspoons chilli powder
Chicken broth to cover the ingredients (about 4 cups)
salt & pepper to taste (about 1 teaspoon each to start)
optional garnishes: chopped cilantro, sour cream, sliced avocado, shredded cheese...
Prep and chop all the veggies. Place veggies, spices, chicken breasts and thighs all into the crockpot in no particular order. Cover with broth.
Set the crockpot to high for 1 hour, then turn to low for an additional 4 hours.
Using two forks, reach into the soup and shred apart the chicken, as well as season with a little more salt and pepper ( if needed) just before serving!
